Carrot and Coconut Salad

This is my new favorite salad. Easy and quick to prepare; light and refreshing to eat. The original recipes calls for pecans, I prefer walnuts.

  • 5 cups grated carrot
  • 2 cup shredded coconut
  • 1/3 cup raisins
  • ¾ cup walnuts, roughly chopped
  • 2 tablespoons olive oil
  • 3 tablespoons lemon juice

In a salad bowl combine all ingredients and mix well.
